Taking advantage of its natural, lush green setting, Innahura Maldives has created its own sustainable produce garden onsite, where a huge variety of vegetables, fruit, herbs, and spices are grown.
Many of the kitchen’s ingredients such as cherry tomatoes, cucumbers, eggplants, green peppers, radishes, alongside tropical fruit such as watermelons and bananas, travel less than 100 metres from the resort’s garden.
Grown using natural fertilizers, the organic produce harvested from the 12m wide and 30m long sustainable garden is used by the talented chefs who use it to incorporate into the resort’s F&B outlets’ menus and create wholesome dishes for guests and staff members.
New varieties of seeds are planted regularly in the garden. During the first harvest, the kitchen team gathered 110kg of watermelons, 48kg of cucumbers, 5kg of cherry tomatoes, 12kg of eggplants, 2kg of green peppers, and 1kg of radishes.
The resort is also planning to introduce a new experience for its guests, whereby they can visit the garden and learn how fruit and vegetables are cultivated on the island, as well as how this initiative helps respect the natural environment.
