Vakkaru Maldives will welcome Chef Marcel Thiele, a certified MasterChef and Spicehunter® and International High-End Gastronomy Expert to the island from 10th to 13th July to host a series of exclusive dining experiences and cooking classes, with a focus on sustainable and ethical culinary experience.
Designed exclusively for Vakkaru Maldives, the menu is created centered around the Hippocratic belief ‘make the food your medicine before the medicine becomes your food’, the ‘Mother Earth Principle’ follows Dutch cuisine and uses a minimum of 80% plant-based ingredients and a maximum of 20% animal-based products in each of its dishes.
The culinary delights will be made using fresh and locally produced ingredients from Vakkaru Maldives’ very own organic farm. The menu aims to reinforce Vakkaru’s commitment to developing sustainable business through its farm-to-table initiative.
The six-course ‘”Spice Hunter” menu includes gastronomical delights such as ‘Vegan Oyster’, ‘Mother Earth’; avocado with Valhorna Manjari chocolate and orange liqueur and ‘Red Wagyu Bull’; a dry aged beef with black barbacoa served with baby carrots, red radishes and olive oil. Visitor’s can experience the culinary delights at Onu, Vakkaru’s authentic South East Asian restaurant. Chef Marcel will also host a one-off cooking class at Vakkaru’s Organic Farm.
